Varrone On Tour – Seconda tappa

Il connubio tra produttori, territori e maestri della gastronomia viene celebrato durante tre serate uniche e speciali a Milano. Il luogo, il tempio della griglia: Varrone. nella seconda serata il padrone di casa ha esaltato una carne di rara eccellenza con la giusta cottura e vi ha voluto abbinare un vino d’eccellenza. Ne è nata una serata nella quale il palato ha dialogato con il cuore e l’emozione è passata attraverso il gusto. Una delle tre carni di Black Angus più buone al mondo proviene dall’allevamento dello spagnolo Miguel Vergara che da tre generazione seleziona e incrocia i migliori bovini per poi allevarli allo stato brado in capi sterminati nei quali mangiano speciali cereali creati appositamente. Per accompagnare queste prelibatezze sono stati affiancati i pregiati vini di Poggio di Sotto che dal 1989 raccontano l’anima più nobile del Rosso e del Brunello di Montalcino. In loro vigneti a conduzione biologica colgono l’essenza di un patrimonio unico. 

Il menu scelto da Vergara dà corpo a questo affascinante dialogo tra l’anima spagnola della carne e l’eleganza toscana del vino. Ma è stata apportata una variazione, si è iniziato con i piatto forte, la T-Bone Vergara Selezione Massima, emblema della qualità assoluta per permetterle di apprezzarla al massimo, senza contaminazioni. Poi è stato servito il Pinchos di Chateaubriand, bacon Miguel Vergara e uova di quaglia e tartare dai toni decisi, la Grande selezione di Cecina de Leon, il Carpaccio di Chuleta maturata e i Bucatini all’amatriciana con bacon di Black Angus di Miguel Vergara. 

I rappresentanti delle due esclusive aziende, Massimo Minutelli e Tony Melillo ci hanno accompagnato con il racconto e la parola per farci apprezzare maggiormente ciò che appagava il palato e prendere consapevolezza delle emozioni provate.

To accompany these delicacies, the fine wines of Poggio di Sotto have been added, which since 1989 have revealed the noblest soul of Rosso and Brunello di Montalcino. In their organically managed vineyards they capture the essence of a unique heritage. 

The menu chosen by Vergara gives body to this fascinating dialogue between the Spanish soul of the meat and the Tuscan elegance of the wine. But a variation was made, we started with the main courses, the T-Bone Vergara Selezione Maxima, emblem of absolute quality to allow it to appreciate it to the maximum, without contamination. Then the Pinchos by Chateaubriand, Miguel Vergara bacon and quail eggs and tartare with bold tones, the Grande selection by Cecina de Leon, the Carpaccio by Chuleta maturata and the Bucatini all’amatriciana with bacon by Black Angus by Miguel Vergara were served. 

The representatives of the two exclusive companies, Massimo Minutelli and Tony Melillo accompanied us with the story and the word to make us appreciate more what satisfied the palate and become aware of the emotions experienced.
