Lo Chef Pino Cuttaia insieme all’imprenditore Vittorio Borgia ha aperto un ristorante bistro che diventerà il nuovo punto di riferimento della ristorazione milanese. La location è elegante e raffinata, le luci sono soffuse e il personale molto cortese e l’atmosfera vuole essere accoglientemente calda come se fossimo a cena dalla “mamma”. I piatti del menù vogliono raccontare la Sicilia contemporanea, seguendo il ciclo naturale delle stagioni, rispettando la biodiversità e prestando attenzione alla sostenibilità. Il mare regala materie prime preziose e le persone che le fanno arrivare a noi amano il proprio lavoro. Le materie prime provengono da presidi Slowfood, come il maialino nero dei Nebrodi, i formaggi dell’azienda Passalacqua e la fava larga è di Leonforte. Mi sono fatta consigliare e ho iniziato con il macco di fave con gnocchetto di ricotta, delicato ma con carattere, ogni cucchiaio aumentava la sensazione di piacere; il manzo alla pizzaiola era  gustosamente delicato. Come primo la minestra di pesce era intrigante e succulenta; la ricciola in finta brace una scoperta di freschezza e sussurrato carattere. La cornucopia di cialda di cannolo e pistacchio di Passalacqua è stata una dolce conclusione.

Un’esperienza gastronomica che consiglio e dove è piacevole tornare.

The dishes on the menu want to tell the story of contemporary Sicily, following the natural cycle of the seasons, respecting biodiversity and paying attention to sustainability. The sea gives precious raw materials and the people who bring them to us love their work. The raw materials come from Slowfood presidia, such as the black pig of Nebrodi, the cheeses of the Passalacqua company and the broad bean is from Leonforte. I got advice and started with the broad bean macco with ricotta dumpling, delicate but with character, each spoonful increased the feeling of pleasure; The beef pizzaiola was deliciously delicate. As a first course, the fish soup was intriguing and succulent; The amberjack in fake embers a discovery of freshness and whispered character. Passalacqua’s cannoli and pistachio wafer cornucopia was a sweet conclusion. A gastronomic experience that I recommend and where it is pleasant to return.
