Per la prima volata due sommelier hanno unito le loro conoscenze e la loro passione per creare qualcosa di unico e diverso. Ne è nato un menù perfettamente armonizzato con la scelta dei vini e del sakè per regalare un’esperienza sensoriale da ricordare. Molti non sanno che il sakè si sposa molto bene con i sapori della tavola ed esalta i piatti con i quali lo si abbina; inoltre ha proprietà benefiche in quanto contribuisce ad abbassare il colesterolo, fa bene al cuore e alla pelle dal momento che è ricco di amminoacidi e lipidi.
Mario Ippoliti e Marius Dumitru ci hanno accompagnato in un racconto che parte dalla parola e, passando dal gusto all’olfatto, arriva diritto al cuore. Abbiamo iniziato con ostriche con perla di erborinato e crescione accompagnate da un sakè Rokkasen Hitotoki Sparkling; abbiamo continuato con carpaccio di ricciola, prosciutto d’oca affumicato, champonzu e nasturzio con un sakè Urakasumi 12. A questo punto siamo passati a una selezione di vini provenienti dalla Romania, terra che storicamente produce grandi vini, grazie al territorio diviso in due dal Danubio e bagnata dal Mar Nero. Il raviolo arrotolato farcito di ricotta e spinaci con brodetto di cozze è stato accompagnato da un Feteasca Regala del 2023 della cantina La Sapata; la guancetta di vitello al tartufo nero con purè di sedano rapa e scampo crudo marinato si è sposato perfettamente con le note del Babeasca Negra del 2023; il creme caramel di foie gras al profumo d’arancia è stato esaltato da un calice di Orange Wine Feteasca Regala del 2024. Infine la foresta nera, rivisitata, è stata servita con un sakè Inata Sherry Barrel, invecchiato in botti di Sherry, si caratterizza per le note di cioccolato, funghi secchi, caramello salato, castagna cotta e fava tonca.

For the first sprint, two sommeliers combined their knowledge and passion to create something unique and different. The result is a menu perfectly harmonized with the choice of wines and sake to give a sensory experience to remember. Many people do not know that sake goes very well with the flavors of the table and enhances the dishes with which it is combined; it also has beneficial properties as it helps lower cholesterol, is good for the heart and skin since it is rich in amino acids and lipids. Mario Ippoliti and Marius Dumitru accompanied us in a story that starts from the word and, passing from taste to smell, goes straight to the heart. We started with oysters with blue pearl and watercress accompanied by a Rokkasen Hitotoki Sparkling sake; we continued with amberjack carpaccio, smoked goose ham, champonzu and nasturtium with a 12 Urakasumi sake. At this point we moved on to a selection of wines from Romania, a land that historically produces great wines, thanks to the territory divided in two by the Danube and bathed by the Black Sea. The rolled ravioli stuffed with ricotta and spinach with mussel broth was accompanied by a 2023 Feteasca Regala from the La Sapata winery; the veal cheek with black truffle with celeriac puree and marinated raw scampi went perfectly with the notes of 2023’s Babeasca Negra; the orange-scented foie gras crème caramel was enhanced by a glass of 2024’s Orange Wine Feteasca Regala. Finally, the black forest, revisited, was served with an Inata Sherry Barrel sake, aged in Sherry barrels, characterized by notes of chocolate, dried mushrooms, salted caramel, cooked chestnut and tonca bean. “There is no such thing as the perfect wine, but the perfect time for every wine”.
