L’anno inizia con un nuovo attesissimo appuntamento con le cene di Giovani Talenti presso Eataly Milano Smeraldo. Questa volta la collaborazione con Identità Golose ha portato alla scelta dello chef Matteo Grandi del ristorante Matteo Grandi in Basilica di Vicenza, 1 stella Michelin. I suoi piatti nascono dall’intuizione creativa e dalla fusione raffinata tra cultura asiatica e francese. I suoi piatti parlano al palato in modo contemporaneo, pulito e immediato.
Il 13 gennaio alle ore 20.00 avremo la possibilità di fare un viaggio tra i sapori iniziando con il “Branzino al vapore beurre blanc, carciofi, limone e peperoncino”, un piatto delicato e vibrante, in cui acidità e note aromatiche dialogano con equilibrio. Si prosegue con il “Risotto al broccolo fiolaro, taleggio e rafano” che unisce territorialità veneta e profondità gustativa. Il piatto principale è la “Faraona con cavolfiore fumé e salsa al tartufo”, intensa e avvolgente, capace di raccontare l’inverno con eleganza. A chiudere, il dessert “Castagna e mandarino”, un finale fresco e confortante che gioca tra dolcezza, agrumi e memoria.

This time, the collaboration with Identità Golose has led to the selection of chef Matteo Grandi from the restaurant Matteo Grandi in Basilica di Vicenza, which has one Michelin star. On 13 January at 8 p.m., we will have the opportunity to take a journey through flavours, starting with “Steamed sea bass with beurre blanc, artichokes, lemon and chilli”, a delicate and vibrant dish in which acidity and aromatic notes interact in perfect balance. We continue with “Risotto with broccolo fiolaro, taleggio cheese and horseradish”, which combines Venetian regionality and depth of flavour. The main course is “Guinea fowl with smoked cauliflower and truffle sauce”, intense and enveloping, capable of recounting winter with elegance. To finish, the dessert “Chestnut and mandarin”, a fresh and comforting finale that plays on sweetness, citrus and memory.
