Un nuovo entusiasmante viaggio gastronomico creato a quattro mani dagli chef Andrea Aprea e Alessandro Borghese. “Andata e ritorno”, una serata esclusiva svoltasi presso il Ristorante Andrea Aprea a Milano che ci ha coinvolti in un appassionante racconto culinario che parla di tecnica, memoria e creatività, territorio, identità e innovazione e alta cucina italiana contemporanea. Un racconto fatto a due voci, due voci diverse, ma unite dalla ricerca dell’eccellenza e dalla voglia di emozionare. Dalla loro maestria è nato un menù a sei portate caratterizzato da un equilibrio di tradizione e sperimentazione in modo che ogni piatto diventasse una narrazione coinvolgente, vibrante e positiva.
Si è iniziato con Caprese dolce salato dello Chef Aprea e La gang del sottobosco dello Chef Borghese e poi Fungo portobello e la sua farcia di pioppini, cipolla rossa, nocciole e albicocche disidratate, ristretto di funghi, tartufo nero ed erbette. Come prima portata il Coniglio al Mare dello Chef Borghese e il raviolo all’uovo Pasta Fresca: il lusso della semplicità con coniglio brasato, salsa alle vongole, tartufi di mare e olio al prezzemolo Riso Carnaroli selezione Dama, topinambur, nocciola, granchio, ribes dello Chef Aprea. La portata principale ha visto il Baccalà e Ciccioli dello Chef Aprea con Cime di rapa e provola affumicata e poi la Guancetta di Vitello dello Chef Borghese. Per concludere in dolcezza Caffè, cioccolato, cardamomo, purea di patate al burro acido, prezzemolo di Alessandro Borghese e Intensità di Limone dello Chef Andrea Aprea.

An exciting new gastronomic journey created by chefs Andrea Aprea and Alessandro Borghese. ‘Andata e ritorno’ (Round Trip) was an exclusive evening held at the Andrea Aprea Restaurant in Milan, which drew us into a fascinating culinary tale of technique, memory and creativity, territory, identity and innovation, and contemporary Italian haute cuisine. A story told by two voices, two different voices, but united by the pursuit of excellence and the desire to excite. Their mastery gave rise to a six-course menu characterised by a balance of tradition and experimentation, so that each dish became an engaging, vibrant and positive narrative.
We started with Chef Aprea’s sweet and savoury Caprese salad and Chef Borghese’s La gang del sottobosco (The Undergrowth Gang), followed by portobello mushrooms stuffed with pioppini mushrooms, red onion, hazelnuts and dried apricots, mushroom reduction, black truffle and herbs. The first course was Chef Borghese’s Coniglio al Mare (Rabbit at Sea) and Pasta Fresca egg ravioli: the luxury of simplicity with braised rabbit, clam sauce, sea truffles and parsley oil. Chef Aprea’s Dama selection Carnaroli rice, Jerusalem artichoke, hazelnut, crab and currants. The main course featured Chef Aprea’s Baccalà e Ciccioli (salt cod and pork crackling) with turnip greens and smoked provola cheese, followed by Chef Borghese’s Guancetta di Vitello (veal cheek). To finish on a sweet note, Alessandro Borghese’s Caffè, cioccolato, cardamomo, purea di patate al burro acido, prezzemolo (coffee, chocolate, cardamom, sour butter mashed potatoes, parsley) and Chef Andrea Aprea’s Intensità di Limone (lemon intensity).
