Si è appena conclusa una gara culinaria d’eccezione, la sesta edizione del Superyacht Chef Competition. Questa competizione è stata organizzata dal centro di formazione La Belle Classe Academy dello Yacht Club de Monaco e da Bluewater presso il prestigioso Yacht Club de Monaco. Nove tra gli chef che normalmente lavorano su superyacht tra i 36 e i 97 metri si sono sfidati per mostrare il loro talento. Tra questi, Francesco Federico Benassi, chef del 50Steel Almax (50m) del prestigioso cantiere italiano Sanlorenzo; Edouard Michel (M/Y Alfa G – 60m), William Richard Pitt-Brooke (M/Y Okto – 66m), Camillo Grosso (M/Y Vertige – 49.9m), Gaëtan Di Santo (M/Y Ocean One – 36m), Christoph Siebentritt (M/Y Synthesis – 70m), Richard Broom (M/Y Illusion – 65m), Gino Razzano (M/Y Carinthia VII – 97m) e Benjamin Ferrand (M/Y Victoria Del Mar – 50m). Con uno spazio ristretto, tempi cronometrati e ingredienti rimasti segreti fino all’ultimo momento, hanno mostrato tutto il loro talento. Questo evento mostra l’eccellenza del lavoro che c’è dietro le quinte della nautica da diporto.

L’evento si è svolto sotto la supervisione dello chef Joël Garault, presidente dell’associazione Goût et Saveurs di Monaco, dello chef Philippe Joannès, Meilleur Ouvrier de France e direttore F&B di YCM, e di Simon Ganache, chef di YCM events. Il patron è stato Guillaume Gómez, Ambasciatore della Gastronomia di Francia, che ha servito quattro presidenti al Palazzo dell’Eliseo.

Il vincitore è stato un felicissimo Benjamin Ferrand (M/Y Victoria Del Mar – 50m) acclamato dai suoi compagni di equipaggio. “Ho cercato di renderlo super gourmet, giocando con le consistenze con un’emulsione, una salsa molto gustosa da una riduzione di granchio. Per dessert, ho preparato un tiramisù leggero con spuma, un crumble croccante e salsa Suzette. Con cioccolato, cacao e un tocco di lime Kaffir, penso che il tema sia stato scelto bene”, ha spiegato lo chef. Si è rivelata una sinfonia di sapori audacemente orchestrati, serviti dagli studenti del Lycée Hôtelier de Monaco, lì per scoprire di più sull’universo dello yachting.

La giuria d’eccezione era Presieduta da Jean-François Girardin, Meilleur Ouvrier de France 1993, già chef del Ritz e Presidente della Société Nationale des MOF; Mark Reynolds (Regno Unito), Presidente della Craft Guild of Chefs (rinomata organizzazione britannica per cuochi professionisti), ha 30 anni di esperienza, principalmente nel mondo del calcio, come Executive Chef dell’ospitalità allo stadio di Wembley e poi all’Arsenal Gunners, prima di approdare al Tottenham; Dimitri Droisneau (FRA), con tre stelle Michelin grazie al suo ristorante mediterraneo La Villa Madie al Cassis; Wendy Van Den Schrick (FRA), Ambasciatrice di Moët Hennessy; Duncan Biggs (Regno Unito), un esperto chef di superyacht e co-fondatore di Ocean Wave Monaco, appassionato di riduzione degli sprechi alimentari e promozione di un consumo energetico ragionevole; Paulo Ucha Longhin (BRA) (M/Y Hercules – 50m), vincitore dell’edizione 2024 che privilegia i prodotti locali e la sostenibilità. Gli chef hanno avuto a disposizione solo cinque minuti dalla scoperta degli ingredienti misteriosi per ideare le loro ricette, 40 minuti per produrre il loro piatto nella prima fase, poi 60 minuti per creare un piatto e un dessert caldo per la finale. Ogni ingrediente è stato valutato per la sostenibilità. E poiché lo spreco alimentare è un criterio chiave, i concorrenti dovevano essere inventivi in ogni fase del processo. Il pubblico poi è stato invitato ad aggiungere un ingrediente a sorpresa, rendendo ogni piatto unico.

An exceptional culinary competition, the sixth edition of the Superyacht Chef Competition, has just ended. This exhibition was organized by the La Belle Classe Academy training center of the Yacht Club de Monaco and by Bluewater at the prestigious Yacht Club de Monaco. Nine of the chefs who normally work on superyachts between 36 and 97 meters competed to show their talent. With a confined space, timed times and ingredients that remained secret until the last moment, they showed all their talent. This event showcases the excellence of the work that goes into the scenes of yachting. The event was held under the supervision of chef Joël Garault, president of the Goût et Saveurs association of Monaco, chef Philippe Joannès, Meilleur Ouvrier de France and director of F&B of YCM, and Simon Ganache, chef of YCM events. The patron was Guillaume Gómez, Ambassador of Gastronomy of France, who served four presidents at the Elysée Palace. The winner was a delighted Benjamin Ferrand (M/Y Victoria Del Mar – 50m) cheered on by his crewmates. “I tried to make it super gourmet, playing with textures with an emulsion, a very tasty sauce from a crab reduction. For dessert, I made a light tiramisu with foam, a crunchy crumble and Suzette sauce. With chocolate, cocoa and a touch of Kaffir lime, I think the theme was chosen well,” explained the chef. It turned out to be a symphony of boldly orchestrated flavours, served by the students of the Lycée Hôtelier de Monaco, there to discover more about the yachting universe. The exceptional jury was chaired by Jean-François Girardin, Meilleur Ouvrier de France 1993, former chef of the Ritz and President of the Société Nationale des MOF; Mark Reynolds (UK), Chairman of the Craft Guild of Chefs (a renowned British organisation for professional chefs), has 30 years’ experience, mainly in football, as Executive Chef of hospitality at Wembley Stadium and then at Arsenal Gunners, before joining Tottenham; Dimitri Droisneau (FRA), with three Michelin stars thanks to his Mediterranean restaurant La Villa Madie al Cassis; Wendy Van Den Schrick (FRA), Moët Hennessy Ambassador; Duncan Biggs (UK), an experienced superyacht chef and co-founder of Ocean Wave Monaco, who is passionate about reducing food waste and promoting reasonable energy consumption; Paulo Ucha Longhin (BRA) (M/Y Hercules – 50m), winner of the 2024 edition that favors local products and sustainability. The chefs had only five minutes from discovering the mysterious ingredients to devise their recipes, 40 minutes to produce their dish in the first phase, then 60 minutes to create a dish and a hot dessert for the final. Each ingredient has been evaluated for sustainability. And because food waste is a key criterion, competitors needed to be inventive every step of the way. The audience was then invited to add a surprise ingredient, making each dish unique.
