For Epiphany, I chose pink, a colour that Catholics began to consider a symbol of happiness and joy, which is why it is used on certain Sundays leading up to Christmas. It was then used for the royal robes of emperors and deities, embodying the concept of positive sovereignty. I therefore toasted with a bottle of an elegant, refined and harmonious wine, Brut Rosé from La Scolca. It is made from pure Cortese grapes that are vinified and sparkling. Before the second fermentation, a small amount of Pinot Noir is added to create the rosé colour. On tasting, the aroma is delicate, with hints of orange blossom and rosehip that fade into red fruits and bread crust on the finish.
