Food and Wine with La Scolca

26 Ottobre, 2020 Published in Food & Beverage

The love story between food and wine dates mists of time. One blends with the other in a riot of flavors and delights for the palate. The right combination creates a magical harmony between smells and flavors like happens between two people who love each other and choose each other. The ancient Greeks was the first to devote their attention to the combination of these two elements, mentioned by poets and philosophers of the time. The Etruscans first and the Romans after accompanied meals with wine, without paying attention how. In the Middle Ages people began to choose what to drink with every dishes. During the Renaissance appeared the first gastronomic books in which to find indications of combinations between food and wine, obviously dedicated to hight social classes. The seventeenth century was characterized a new concept: good taste that was also applied to the food sector. The modern idea of restaurant born in the nineteenth century and the first menus began to be written with the most appropriate combinations between dishes and wine. La Scolca passionately embraces the desire for increasingly refined combinations, wishing that its nectars can enhance and be enhanced by tasty and refined dishes. In addition to meeting some of the best international restaurateurs, among them Davide Oldani, the owners of the Ekaterinburg Gavi Restaurant, the owner of La Masseria, the Chef of the Tivoli restaurant in Cortina, has decided to create a partnership with the prestigious Academy of Haute Cuisine and Pastry IFSE of Piobesi Torinese. Founded and directed by Chef Raffaele Trovato, it is the only one recognized as Italian Excellence by the General Secretariat of the Italian Republic and with ASACERT certification and “ITA0039 100% Italian Taste Certification”. The desire to offer different and innovative experiences to wine and cooking lovers, they will organize cooking to discover the alchemy of flavors and in which La Scolca wine is the secret ingredient to recreate traditional recipes and innovative and contemporary dishes with a more international flavor.
