Cooking aboard a superyacht requires skill and organization; when sailing for several weeks without being able to resupply, you need to plan everything, even anticipating the unexpected. The Yacht Club de Monaco’s “La Belle Classe Academy” training center, in collaboration with Bluewater, took into consideration the skill of chefs working on these types of vessels when it created the “Superyacht Chef Competition,” now in its seventh year. This year’s winner was Chef Aaron Thomas of the M/Y Canvas (33 m). His talent, calm, creativity, elegance, and taste are his hallmarks. His winning dish was lobster-based and divided into two parts: a main course accompanied by asparagus and a morel fricassee, followed by a bisque. The jury, chaired by Philippe Etchebest, was composed of exceptional names: Marcel Ravin (FRA), three Michelin stars (two for Blue Bay and one for the Elsa restaurant at the Monte-Carlo Beach Hotel); Carlo Cracco (ITA), a Michelin-starred icon of Italian cuisine; Duncan Biggs (UK), co-founder of Oceanwave Monaco and superyacht chef; Jeeny Maltese (VEN), a Latin American cuisine presenter; and Tim Mälzer (GER), restaurateur and television host. At the preceding “Grand Chefs Dinner,” approximately 20 chefs were present before His Serene Highness Prince Albert II of Monaco, President of the YCM.
